1- The Catholic commemoration a bit of Culture first

The Catholic holiday of Candlemas, on 2 February, is a feast to commemorate The Presentation of Jesus at the Temple. Mary and Joseph took the baby Jesus to the Temple in Jerusalem forty days after his birth to complete Mary's ritual purification after childbirth and the redemption of the firstborn son. In France, this holiday is called la Chandeleur.

Like any moment in the life of a French human being, an important part of La Chandeleur (Candlemas in English) is again linked with Food this time we are talking Crêpes !

Traditionnal Way: Crêpes de Froment

Time to Prepare : 10 minutes
Cooking Time : 2 minutes / Crêpe

Ingredients (for 15 Crêpes) :

- 250 g Plain Flour

- 4 eggs

- 50 g of softened butter

- 1 pinch of salt

- 1/2 litre milk

 

- Optionnal: few drops of Fleur d'oranger extract (I personnaly prefer without but it is a matter of taste)

 

Mix in a bowl all the ingredients in the following order: Flour, eggs, butter, salt and last milk.

If you have some lumps you can cheat and use a soup robot or a mixer :-)

Leave the mixture alone for at least 30 min (in or out of the fridge it does not matter)


If you have a crepe pan fine if not that's ok. Put medium heat on your cooktop no need to put oil or butter it is already in the mixture... The first crêpe might attach but its normal. Leave the crepe until it is a bit golden than flip it on the other side... 

You can prepare all the crepes if you want in advance but they are of course better fresh! Enjoy.... and happy Chandeleur!!

2- Why do French eat Crêpes at La Chandeleur

Crêpes with its round and golden shape reminds of the sun, this would explain the reason why French people cook crêpe on Candlemas which is the moment of the year in France when days are getting longer faster. It is also during this period of the year when winter seeding would start. People used the excess of flour to cook crêpes which is symbol of prosperity for the year to come.

3- What do French do at la Chandeleur

Not only do the French eat a lot of crêpes on Chandeleur, but they also do a bit of fortune telling while making them. It is traditional to hold a coin in your left hand and a crêpe pan in the other, and flip the crêpe into the air. If you manage to catch the crêpe in the pan, your family will be prosperous for the rest of the year.
