Patrick Vuillat is a french Patisserie chef originally from Lyon who came to Australia more than 20 years ago. He has been in the pastry business for 39 years, all over the world, in hotels, cake shops and restaurants.

We have been willing to try the Sweet Artist Academy for quite a while but freeing up a full day from 9am to 3pm requires a bit of logistics…

The class we took was “the art of creating Macarons”. In summary, we have been completely delighted with the class, the ambiance, the environment, the outcome… by about everything in fact.

The class was very explicit. Patrick (the teacher, former owner of Sugar and Spice) demonstrated how to make macarons (salted caramel, chocolate butter and lemon ganache) with his tips for not missing any. We found the balance between coaching versus “do it yourself” about perfect.

Most importantly, the macarons turned out to be delicious... considering we are likely to improve by practising, according to Patrick.

The class price was $240. We first thought it may be a little expensive but when you do the maths, it is actually amazingly reasonable! We came back with approximately 80 macarons (worth $2 each, this makes $160. You can keep them for about 5 days in the fridge or freeze them!). This leaves $80 for 6 hours of class ($14/ hour) and that’s without counting the booklet and apron to take home...

It is without the shadow of a doubt that we will take more cooking classes with Patrick. The weekend classes, corporate events or the 3 hour evening sessions are obviously convenient for those who are busy during the week... Because of the variety of classes that are available, the hardest will certainly be to decide which class to take next!!!
